View Full Version : My home made dairy free lasagne....

As i love cooking i'd like to share me home made dairyfree lasagne,,,It's Mmmmm.....Cook ya mince beef in wok, add a dash of salt n pepper, and grate an onion( adds more taste)..Keep stirring etc until cooked, and add a tin of chopped tomatoes and the lasagne mix( in the water ) , and stir and simmer for about 10mins or so.....Make ya cheese sauce( i use soya pure margarine)..Melt marg in a pan, then take it away from the hob and add some flour( corn flour or ordinary) mix around until sticks together then add some soya milk then melt slowly on hob...Add some more milk and so on until it becomes thicker...Then add some grated cheese(the ones were allowed)and stir some more..When ya lasagne done pour half into a dish, followed by the lasagne sheets on top, then pour some of the cheese sauce over the sheets....Then do same again and repeat until ya sauce has gone.....I normally grate some cheese on the top of the sauce and also a chopped tomato...Then bung it all in the oven on a baking tray...PS Put a piece of tin foil on the baking tray so when it all bubbles out it all falls onto the foil.....Cook in oven until it's all brown.....Theres ya dairyfree lasagne....i cooked it for me tea tonight...

sounds lovely.... i'm not at all envious as not able to eat wheat... and used to love lasagne.
but what no worcestshire sauce in the meat?:o

I usually cheat and do a dolmio bolognese sauce with the mince - much quicker, but water it down plenty as the lasagne soaks it all up.

What sort of lasagne mix are you using? Watch out for packet sauce mixes as most of them have milk in them in some shape or form.

I've got a similar lasagne recipe, which uses a different (and I think easier) way of getting the cheese sauce. And which is a hit with non-dairy eaters, as it taste 'rich', which can be hard to achieve with tofu.

Recipe:
- 1/2 lb carrots (chopped). These are optional but work surprisingly well.
- 1/4 cup stock
- 1 lb tofu (herbed if you can get it, otherwise plain silken is fine)
- 8 oz tofutti cream cheese (herbed is best, but plain works)
- 2 tbspn lemon juice (or to taste)
- 1/8 tspn nutmeg (or to taste, I usually use more)
- nutritional yeast (optional but highly recommended, to taste)

Cook carrots in stock for five minutes or until nearly cooked. Add tofu, tofutti cream cheese, lemon juice and stir well. Cook over medium heat, stirring constantly until mixture starts to melt. Stir in nutmeg and nutritional yeast (if using). Remove from heat, keep warm and use in lasagne.

I haven't made it for ages because its rather high calorie, but for those needing to gain weight (or get kids to gain weight) this would be ideal.

PS Matt - can't you get non-wheat pasta sheets for lasagne? I've certainly seen non-wheat pasta in other shapes.

probably i'm just too lazy to bother!! too much effort for just me. lazy option is does it come in a tin or frozen?:o

Anything that takes longer than 10 minutes to cook is far too much for me!!

Sounds a nice lasagne though :)

I use Free & Easy Dairy Free Cheese Flavour Sauce Mix on a regular basis. It is also Gluten and Wheat Free. Its best if made with soya milk instead of water. It comes in a bright yellow tub, Morrisons stock it.

Trufree do lasagne sheets. They taste the same as the normal ones in my opinion, but take a bit longer to cook. I've very purposely never looked at the price :)
