Egg and Bacon Quiche
Ingredients
500g pack fresh shortcrust pastry
½ x 250g pack streaky bacon, cut into strips
1 onion, peeled and finely chopped
3 medium size eggs, beaten
150ml soya milk
salt and freshly ground black pepper
2 firm tomatoes, deseeded and cut into strips
Method
Preheat the oven to 200°C, 400°F, Gas Mark 6.
Roll out the pastry on a floured surface until large enough to line a 20cm flan ring or dish. Lay a piece of greaseproof paper in the base of the flan ring/dish, on top of the pastry and fill with baking beans.
Bake in the oven for 10 minutes then remove the greaseproof paper and beans and continue to cook for a further 5 minutes. Remove from the oven and leave to cool.
While the pastry is cooking, make up the filling. Heat a medium size saucepan or frying pan and cook the bacon pieces until golden and crispy. Remove the bacon and add the onion and cook until softened.
In a medium size bowl, mix the eggs with the soya milk and seasoning. Stir in the bacon and onion into the base of the flan case and pour into the flan case. Scatter over the chopped tomato.
Bake the flan in the oven for 15 - 20 minutes or until the top is just firm. Allow to cool slightly before serving, if serving hot.
