View Full Version : Sue's Chocolate Mousse

Ingredients -
150ml Soya Dream (or similar) chilled, 13g cocoa powder sieved, 75g dairy free chocolate, 1tbsp clear honey, 1 and a half tbsp orange juice, quarter of a sachet of gelatine.

Method
Whisk the chilled Soya Dream until it has doubled in volume
Melt the chocolate in a glass bowl (1 pint size should be large enough)
Stir the sieved cocoa powder into the melted chocolate.
Stir in the honey and orange juice.
Dissolve the gelatine in 1 and a half tbsp of hot water in a small bowl over boiling water, stir until clear.
Stir the gelatine and whipped Soya Dream into the chocolate mixture
Place in fridge to set.

Substitutes
I use vege-gel instead of gelatine. I ignore what it says on the packet! I use a quarter of a sachet of the vegegel and add it to a little cold water. Stir until dissolved and then stir it into the combined chocolate Soya dream mixture.

I don't use honey as I am allergic to it!

For those allergic to citrus I am guessing that the orange juice is used as a sweetener so maybe you could add some sweetened water?

For the record I used Lindt 70% cocoa chocolate.

Thanks for the recipe it sounds really great, and I look forward to trying it.

Have the flu at the minute so some choclate mousse would go down very well.
