I've found this great product called 'Egg replacement powder' (I got it in a health food shop) which can be used in place of eggs in cake recipes.

You can replace the eggs with this, and use a dairy-free margerine (like Pure) instead of butter/margerine. I've found this works really well in most recipes. The only downside is that the cakes don't tend to rise quite as well as they would if you used eggs, so you might want to add a bit of extra baking powder to help it along.

I made a chocolate cake yesterday using this recipe:

6oz caster sugar
6oz dairy-free margerine
5oz flour
1oz cocoa powder
and then following the instructions on the egg replacer, the equivalent of 3 eggs (it was 20g replacer powder plus 60ml water per egg).

I forgot the baking powder so it did come out a little bit flat!! Still tasty though :)
