This cake may be sandwiched with vegan margarine creamed with sugar and vanilla essence or chocolate, and iced with chocolate icing.

115g/4oz raw cane sugar (white sugar is not vegan)
4tsp cocoa or carob powder
1/2tsp sea salt
170g/6oz wholewheat flour
3/4tsp bicarbonate of soda
90ml/3fl oz vegetable oil
1tsp vanilla essence
2tsp cider vinegar or wine vinegar
200ml/1/3pt cold water

Mix thoroughly the sugar, cocoa (or carob), salt, flour and soda in a mixing bowl.

Add the oil, vanila essence and vinegar and pour cold water over the mixture.

Combine well with a fork, but do not bear.

Pour into two greased sandwich tines and bake in a moderate oven at 350F/180c/GM 4 for 30 mins or until the cake springs back when lightly pressed. Leave to cool.


Chocolate Icing

55g/2oz vegan margarine
1oz/1/4 cup cocoa or carob powder
4tbs soya milk
140g/5oz raw cane sugar
1tsp vanilla essence

Combine the first 4 ingredients in a saucepan and bring them to the boil slowly, stirring constantly.

Boil for 1 minute.
Remove from the heat and beat until cold. Add the vanilla essence and spread the icing on the cake.

I have made this, and i omitted the salt and vinegar out of it, i also used white flour instead of wholewheat. i didn't rise >.< it came out like a brownie! it tasted good tho! lolz

Please please can anyone tell me if this works without the vinegar!?
My sister has her 21st in a couple of weeks and as she has a long list of allergies we usually get a Free From cake from Sainsbury's but it is now discontinued so I'm going to have to make one!!

I need it to be free from

Dairy
Acetic acid (vinegar)
Citric acid
Nuts
sesame
alcohol

I think thats it!

try www.authenticbread.co.uk - they do a choc cake that is dairy and wheat free but has eggs - very quick to respond to emails, so ask where your nearest stockist of them is.. also check out the yellow 'free from' packets in the organic/allergy section in your local asda/sainsbury etc.. there is a chocolate cake packet mix that is free from various things too :)

i would have said that the recipe would work - i did it without the salt and the vinegar, but it didn't rise >.<

you can theoretically adapt any cake recipe... using vegan/dairy free marg and egg substitute if eggs are not ok :)

also, have you asked at the bakery if they do request cakes? many years ago when i worked for sainsburys they would make a cake on request!

if there is anything i've missed give me a yell :)

I was trying not to have to go the home made route but none of the major supermarkets can help with a birthday cake so will try the local bakers before I go and get the Pure spread and just do a sponge with 'butter' cream! I have a 21st forever friends bear that will work for decoration.

:D Hi I am allergic to lemon/citric acid and milk too and I have a fool proof fab tasting cake tried and tested!! Dairy free only, it contains eggs and wheat but just change them to suitable substitutes. :drool:

4oz sugar & 4oz pure soya (vegan Marg) cream together (can all be done in food processor which cuts prep time to 5-10mins). Weight 8oz Self raising flour and get 4 med-large eggs. Crack in one egg and add a little of the flour (to stop it curdling) then mix thoroughly, do the same with the rest of the eggs and flour untill all mixed in. Then add 4 teaspoons of Vanilla extract and 2 teaspoons of baking powder ( or essence will do, sounds overpowering but calms down when cooking and tastes fab) you can then add a good handful of anything you like (soak currants in 4 dessert spoons of Amerreto (optional) for 20mins+ is nice if no nut allergies involved or melt Green & Black Gold Maya Choc (yes the whole big block!!) in a glass bowl over steam with 2 tablespoons of orange juice, a teaspoon of orange zest (no white pith if you can help it as its rather bitter), 4 dessertspoons of Grande Manier (optional) (sorry if spelt wrong its orange liquer), 2 teaspoons of orange essence/flavouring/extract and 2 heaped teaspoons of coco or carab powder. Or Coconut (sprinkle some on top as well);)

There are many other possibilities but you get the idea, still include the vanilla even in the other flavours as it tastes great. :unsure:

Don't be alarmed that the mixture is really runny thats how it is supposed to be. Get an 8 inch tin grease or lined with grease proof paper (I tend to put a circle of grease proof on bottom and grease the edges) Place in a preheated oven on gas mark 4 ( sorry not sure on electric but its med-low) for 1hr 15 mins in the middle of the oven. Do the usual check by puting a knife in centre if comes out clean its done if not put back in and check every 5 mins. After cooling place in an air tight tin or tub (tastes better on the second day). A note for newbies, I know you probably would have guested but wanted to say that even sunflower marg and olive spreads tend to have buttermilk or lactose. Check for vegan signs. I only mention this cos I saw a receipe with sunflower marg and I wanted you to be safe than sorry. Cheers xx :naughty:

Probably a slightly stupid question, but can you use the other Pure margarines, as I only use the sunflower based one (try not to have too much soya) and wondered if that worked ok as well?

A note for newbies, I know you probably would have guested but wanted to say that even sunflower marg and olive spreads tend to have buttermilk or lactose. Check for vegan signs. I only mention this cos I saw a receipe with sunflower marg and I wanted you to be safe than sorry. Cheers xx :naughty: I had a problem with this last night actually, I was told the dessert didn't have any dairy listed, no butter, no cream, but it had margarine . Decided that after reading many tubs of marg, that it probably wasn't safe to eat!! :unsure:

Off hand I believe they are all made for vegans so should be ok.
I tend to avoid anything that has marg in the ingedients just incase.
Gonna do some experimenting with some receipes soon so I'll post some more :) when I have them. Thanks xx

p.s sorry if i'm being brief or random in my postings, I'm usually doing these at work so haven't loads of time inbetween calls!! xx
