Does anyone have a recipe for tonight - pancake day?

Is this any good?!

Vegan Pancakes

Ingredients:
• 1 ripe banana, mashed
• 2 cups water
• 1/2 cup uncooked oatmeal
• 1 1/2 cups whole-wheat flour
• 2 teaspoons baking powder
• 1 teaspoon cinnamon
• 1 teaspoon nutmeg
• vanilla extract to taste (optional)
Method:
Mix together the mashed banana and water. Add dry ingredients and mix, leaving lumps in the batter. Pour 1/2 cup of batter into a hot, lightly oiled frying pan. When bubbles rise through the middle of the pancake and break on the top, flip the pancake and cook until browned underneath. (Note: Test the pan before cooking the pancakes by throwing a few drops of water onto it. If the water jumps around and then disappears, the pan is at the correct temperature.)


Notes:
This recipe takes less than five minutes to prepare, not including cooking time.
You must leave lumps in the batter - pancake batter which is too smooth will spread out very thin on the pan, and the result will be a rubbery, tough cake.
The batter doesn't freeze well but can be refrigerated for a short time.

Pancake suggestion: Put small slices of banana or apple onto the top of each pancake before flipping, and dribble a small amount of batter onto the pieces of fruit. Finish cooking the pancake according to the recipe.

Oh wow, how good do those pancakes sound? I just had boring old traditional pancakes substituting soya milk for cows milk (I'm just lactose intolerant so the eggs are ok) but I will definitely try that recipe another time!

Oh, by the way, the recipe for traditional pancakes is:

1/2 pint milk
1 egg
4 oz flour

Beat all ingredients together. Heat a little oil ina small frying pan and add a couple of tablespoons of the mixture and spread out to coat the bottom. Flip after about thirty seconds and after another twenty seconds or so slide onto a plate. This recipe should make about eight pancakes which taste great with any sweet or even savoury topping!

Hi all,

Thanks for these recipes. Am looking forward to trying them all. Haven't had pancakes yet and will have to have the normal ones, as am unable will eat bananas and oats at present. Oh well, will try the others when I've finished this elimination diet.

i am a mine of recipes!! i just seem to hoard them whenever i happen to find one i like the sound of, that includes cutting them out of magazines and collecting all the monthly supermarket ones too!! hehe

how is your eliminination diet going btw? i've been waiting for an update in your diary ;)

Hi Astra,

Am not doing too good at the minute as have been unwell, due to viruses, stomach bugs etcetera.

Am hoping to be bringing in dairy products soon to find out what part of the products, i am allergic/intolerant to, so will keep you posted on that.

If anyone would like to post recipes then please feel free, a change of diet would do me well.
