can you make whipping cream from half n' half?

Half and half of what?

I've tried adding oil to soya dream to raise the fat content but that didn't work. Adding a little lemon juice works to a certain extent but if you put too much in, the lemon takes over.

Some members here have managed to find a thick cream by Rich (Riches?) in jewish deli's and they say this is very good. If you wanted something thinner you could maybe water it down with soya milk or soya dream.

Have you tried this "recipe" in the "Dairy-Free Lactose-Free Diet Plan for children and adults" by Carolyn Humphries? A must have book!

Makes about 300ml (half a pint)
1tsp powdered gelatine
1tbsp water
150ml (quarter of a pint) Soya Dream, CHILLED
A little caster sugar

1) Put the gealtine in a small bowl and stir in the water. Stand the bowl in a pan of gently simmering water and stir until the gelatine is completely dissolved.

2) Whisk the Soya Dream in a bowl with an electric beater until thick and almost double in bulk. Sweeten to taste, if liked, with caster sugar.

3) Whisk in the gelatine, then place the mixture in the fridge for about 30 minutes to set. Use as required instead of whipping cream.

I have carried out the first two parts of this but used veg e gel instead of gelatine. I then added melted dairy free chocolate and left it in the fridge. This set into a soft chocolate mousse :bleh: See the recipe database for more detail.

I guess the more gelatine or veg e gel you use the harder it will set.
