Bolinese Chicken
Serves: 4
Preparation Time: 30 mins
Cooking Time: 30 mins
Ingredients:
6 chicken breasts - chopped
1 onions - chopped
2 cloves of garlic - chopped
3 fresh red chillies - chopped
1 tbsp dark soya sauce
3 tbsp olive oil
2 tsp palm sugar
½ tsp salt
½ can of coconut milk
Equipment Needed:

Knife
Large Frying Pan
Wooden Spoon
Tablespoon

Blender
Step 1: Blend into a smooth paste, the onion, the garlic, ginger, chillies and soya sauce.
Step 2: Heat the olive oil in a frying pan and brown the chicken pieces. Then remove from pan and drain the excess oil except for about 1 tbsp.
Step 3: Fry the smooth mixture and stir constantly.
Step 4: Add the remainder of the ingredients, the sugar, lemon juice, salt and coconut milk and stir continuously until it comes to the boil.
Step 5: Add the chicken and reduce the heat so that it simmers for about 25 minutes until the chicken is tender and the sauce has thickened.
Step 6: Serve with rice, vegetables or a salad.
