8oz chopped dates
4oz caster sugar
pinch of salt
1 teaspoon bicarb of soda
2oz margarine
6 fl oz boiling water
1 beaten egg
2 oz chopped walnuts
8oz self raising flour
teaspoon vanilla essence
oven gas 3, 170'c. grease and line a 2lb loaf tin.
dates, sugar, salt, soda, margarine (small bits), walnuts into bowl.
add boiling water. mix to melt margarine.
cool a little then,
add vanilla essence and beaten eggand mix.
add flour until smooth batter is formed.
poor into the tin and bake in centre of oven for about 1 1/4 hours until firm. make sure you don't over do it. cool for 15 mins.
eat cold as slices with margarine. will keep well and freezes no prob.
i have to admit i tend to use the sme amount of walnuts as dates as they come in packs of that size.
it's very forgiving a receipe. change the fruit or nuts to suit yourself. i've done it with some raisins. or almonds....choice is yours. hope you like it.
