I've copied this recipe over from the Freebies forum where Bet posted it, think I'll have a go this week and maybe chuck some choc chips in too, not that I'm a chocoholic but....
Right Pam, heres the recipe. Dont worry about a muffin tin, if you just put the muffin cases on a baking tray, or squeeze them into fairy cake size tin, they still bake OK altho' maybe sightly different shape to traditional muffin!
3oz / 90g Pure
8oz / 250g Light brown sugar
2 oz / 60g cocoa powder
4oz / 120g self raising flour
3 medium eggs, beaten
1 tsp / 5g baking powder
Preheat oven 180C / 350F / Gas mark 4
Cream pure with sugar
Sieve flour, cocoa powder, baking powder together
Add eggs to sugar and pure mixture and then sieve dry ingredients into mixture, stirring well
Divide into 8 muffin cases and bake in oven for 30 mins
(if using fairy cases I only bake for 15 mins)
