I'm looking for ideas for new meals and snacks as I'm now bored rotten of chicken sandwiches and pasta with chicken mince! :( The problem is I'm a really fussy eater and not being able to eat dairy or red meat has elimated more 80% of my already limited diet! The only vegetables I like are potatos and peas and like I said before I can't eat red meat. Anyone have any interesting recipes I can try??????

Is it just red meat and dairy that you have to avoid or anything else? Let us know and we will have a think.

Snacks aren't such a problem, there are a lot of dairy free snacks avaliable. I'm not much use for meals I'm afraid, but if some suggestions appear on here then I'd be willing to try them as well!!
The only thing I can suggest is trying Delia and some of her chicken recipes (http://www.deliaonline.com/recipes/recipeselections/r_0000000860.asp?chicken+recipes)

I'd assume there would be something there/ something you can alter to fit your needs. Hope this helps.

How about making kebabs with chicken on a stick (you can make a tasty glaze with honey and worcester sauce). Ideally you would also put peppers and onion on the stick too but I don't suppose you'd go for that being against most veg.

Home made chicken nuggets? Pieces of chicken or turkey breast fillet dipped in seasoned flour or breadcrumbs and fried/oven baked.

Jacket potatoes - experiment with fillings (tuna and sweetcorn is my favourite).
Omlettes
Toasted sandwiches - dairy free cheese (tofutti spread is good) with turkey ham perhaps?
Make your own quiche or pasties.
Fish dishes?

See if you can find sausages made with turkey or chicken or invest in a sausage maker so you can do your own.

Hi all,

I have some recipes you could try.

You could always have fish coated in breadcrumbs with a side helping of rice fried in some butter with peas through it.

Also make a pasta bake using dairy free cheese sauce instead of tomato, add peas through it and chicken. Then add some slices of potato on top and coat them in some butter mixed with herbs. Put in the oven and cook.

I always knew I should be a chef not an admin assistant. B)

i'd go for some fish. even if you then don't excit it with some spicesand so on there's a world of different tastes out there. simple grilled fish trout/salmon or mackerellyou'll be going some to get fed up with the diff tasting fish that there are and they're very good for you.

i'd also try some diff vegies mange tout, baby sweetcorn, asparagus etc you might suprise yourself.

I can beat you on the 80% as I don't eat any meat ;)

can you eat eggs? I've got this recipe for potato bottomed quiche. Can't remember if I've posted it before.

Potato bottom quiche

4 eggs
frozen veg
pack instant potato
dried onion
seasoning to taste


Heat oven, boil kettle & make up instant potato. Beat eggs and add veg, onion & seasoning. Take a flan dish and line with foil. Spray with fry light and pack down the mash into a compact flat layer at the bottom. Pour on mixture and bake in the oven. Keep an eye on it but the top should brown. Allow to cool and slice. Good for snacking on the move.

Do you like curry? Potato and pea curry is lovely and you could add some chicken. Do you like fish and if so what kind or spicy food? You can make french toast with peas or tortilla with potato. If you do like spices I can search out some recipes.

There are a couple of great ideas there - i will try that quiche, I never would have thought of that myself! The kebabs sound like quite a good idea too.

Fish is a no no I'm afraid though. I don't think I'm allergic to it but every time I have tried it I've ended up being sick. I have tried experimenting with different veggies but really can't stomach them. Up until a couple of years ago I wouldn't eat red meat or salad either and it's just typical that the couple of things I tried and loved I've now been told I can't have :rant: and I can't eat currys - even the ones everyone has promised will be stupidly mild have left me with streaming eyes and blotchy skin - I have very bland tastes! I even had to leave the flat when I used to live with a curry loving couple as even the smell of them cooking used to make my face swell up (much to their amusement!)

Hi there.

Chicken kebabs are nice. Coat the chicken in cajun powder, add onions, peppers and pineapple instead of the above. Serve on a bed of egg noodles. Lovely.

runny honey and soya sauce as sauce for lamb or chicken. add near the end of cooking so the honey doesn't burn. or cocconut milk.

My kids like chicken breaded with finely chopped onion or garlic and chopped parsley. the quick cheat way I do it is to get a large food freezer bag and put in chopped onoin and parsley and breadcrumbs and put in fresh chicken,up to you what size pieces but smaller pieces cook faster. Add olive oil about 1to2 tbsp to moisten and swirl it all round in the bag to coat! Fry off in frying pan! mmmm:drool:

i tend to use a stock cube with the coconut milk and let it simmer gently for a while. works with most meats. used for pork and beef aswell.

No reason why you couldn't bbq it if you want to. Be easier to cut ckicken in strips first I would think. Normally I fry it though. Glad you like the recipe. You could experiment with other herbs or add lemon for a change if you can have lemon.:drool:
