:bleh: This is a wonderful healthy soup that can be cooked and served in under 30 minutes. The vegetables can be varied, using onions, parnsips, carrots, courgettes, broccoli etc.
Ingredients
2 medimum leeks, washed and sliced thinly
1 large potatoe, peeled and chopped finely (about 300g)
2 fat garlic cloves, peeled and chopped
2 tbs Pure
500 ml vegetable stock
500 ml Alpro Soya Milk
Sea salt and ground pepper to taste
a little freshly grated nutmeg
Parsley or spinach (handful)
Method
Put leeks, potatoe and garlic into a large paln with the Pure. Heat until it started to sizzle and then down the heat. Cover the pan with a lid and sweat for about 10 minutes.
Uncover, pour in stock and Alpro Milk, then season to taste, adding a few gratings of fresh nutmeg. Bring to the boil then simmer for about 10 minutes, when the potatoe should begin to break up and thicken the stock.
Add spinach or parsley and return to a simmer for another 5 minutes. This gives the soup a vibrant green colour.
When the vegetables are quite soft, strain off stock into a jug. Whiz vegetables in a food processor until creamy then slowly add back the hot milky stock. Check seasoning and reheat to boiling to serve.
Garnish with a trickle of Soya Dream into each portion and top with chopped chives (if liked) and serve with bread.
