Yesterday I experimented by making gluten-free Yorkshire Puddings. They were in the oven next to the 'real' wheat flour ones. Looking through the glass door, I could see the wheat flour ones had risen several inches--but the others were hidden below the pan level.:( I thought the gluten-free ones would be destined for the garbage, but to my surprise they were really good.:D
Here is the recipe (can't remember the exact measurements as I was only experimenting):
About 3 ounces of yellow corn flour (similar to Masa Harina)
About 1/8 teaspoon of Xanthum Gum powder
1 egg
Some goats' milk
Salt to taste
Pinch of dried sage (neither conventional, nor compulsory)
I just mixed it all together to make a batter, and poured it into two foil pie dishes and cooked it for about 30 minutes at 200 degrees Celsius (the electricity power here is pretty pathetic so it takes longer to cook than expected).
Despite them not rising much, I was amazed at how good they tasted and the texture was good too.:D :D I could have been a bit allergic to the xanthum gum as my face and neck was itchy about an hour after the meal. :( I will try to get an alternative to xanthum--guar gum or carrageenan, but am not sure if they come in powder form or whether they are easily available.
I would really be interested in any recipes (that you have tried and liked) for baked goods that are free of gluten, sugar, baking powder, bicarbonate of soda, vanilla, chocolate. I can substitute dairy products with goats' products. The only two things that have worked for me so far are corn tortillas and the Yorkshire pud. The pastry I made with gluten-free flour was as solid as a rock!! Would love a decent pastry and bread recipe. :drool: I imagine that cakes are impossible to make without without sugar. Thanks.
