as promised.

1lb fresh plums
1 teaspoon ground cinnamon
10oz plain flour
5oz oats
1 teaspoon salt
8oz marg
4 oz brown sugar
10x6 inch greased and lined baking tray oven gas6 400f 200c

destone plums and slice thinly then mix with cinnamon.
flour oats and salt mixed together in bowl.
put marg and sugar in saucepan and heat gently until melted and mixed.
add marg to oats etc mix thoroughly.
take half the dough and put into base of tray firming down.
spread the plums over then cover with rest of dough again pres firmly.

centre of oven and bake for 25-30 mins or a bit longer if you want it even more crispy.
cut into 15 squares then leave in tin to fully cool before turning out.

obviously can be served hot, differnet shape tray can be used and so on.

i've made with fresh apricots. no reason you couldn't use jam or pretty much any fruit fresh or dried and or choc. just not too juicy fruitwise and let it cool before getting it out of tin.

i'm sure can be done with gluten free flour and maybe flaked rice instead of oats. but don't quote me on that. must be something you can replace oats with.

and it was you who wanted it.

so what if on diet. cut them smaller and freeze. no point denying yourself all the treats. just be sensible and have small occasional ones.:)

I made courgette cake at the weekend and that is my treat at the moment, it is a very moist cake that you keep in the fridge so fortunately it doesn't spoil and go dry by being left. It is taking major willpower to just have one piece a day but I don't get my prescription in November if I haven't lost enough weight so I have got to be good.
