View Full Version : Choc chip muffin recipe

Especially for Linny :)

Makes 12

9oz (225g) plain flour
2 tsp baking powder
half tsp bicarbonate of soda
half tsp salt
4-6 oz (110-170g) fine white granulated sugar
3-5 tbsp cocoa powder
1 egg
8-9 fl oz (240-260ml) milk (rice, soya etc)
1 tsp vanilla essence flavouring
3 fl oz (90ml) vegetable oil
Plain choc chips for topping - optional

Method

1 Prepare muffin tin. Preheat oven to 375-400 F, 190-200C or Gas mark 5-6.
2 In a large bowl, sift together flour, baking powder, bicarbonate of soda, salt, sugar and cocoa powder.
3 In another bowl, beat egg with a fok. Stir in milk and vanilla, followed by the oil.
4 Pour all of the wet mixture into dry. Stir just until combined and no dry flour is visible. Batter will be lumpy.
5 Fill muffin cases three quarters full. Sprinkle tops with choc chips. Bake for 20-25 mins until the top springs back when gently pressed.

To make double choc chip muffins add 3oz (85g) plain choc chips to the dry ingredients.

Now the question is, would they taste as good made with wheat-free, gluten-free flour?

Stop tempting me with nice sounding food! I can't be a fat rower!!
May give them a go anyway but just halve the amounts-I'd be sick if I ate 12 :D

Now Claire really you don't eat all 12 at once!!!! I freeze most of them and thaw them when needed or better still microwave them so they are warm - very yummy then.

Ah that's where I've been going wrong with them!
Warm with dairy-free chocolate sauce sounds promising. I will investigate the quality of cooker in my house and then maybe make muffins and other exciting things to eat!
