Thanks for the info.

I don't think I have seen a ready-made gluten-free flour (mixture of different flours) here. We get a lot of Bob's Red Mill products that have individual flour types. http://www.bobsredmill.com/

i think atleast one of those sites had a mixture of gluten free flours so that you can make bread etc. i think you'll be stuck for the raising agent.
go for the flat breads, pancakes, blinis, shortbread,

yeast with small amount of honey, fruit or you can buy fructose in packets.
can you have glucose?
yeast should rise without any added sugar just takes longer. the result will be better as will become a sour dough. much more flavour.
