Found some interesting articles in today's Star--four that are digestively related (mentions IBS, dairy, constipation etc), and one recipe. The corn cakes sound interesting but I've never heard of cilantro - what is that? Does all purpose flour have a rising agent in it? In the UK we have plain flour (nothing added) or self raising flour (contains a rising agent). I didn't read all the bowel articles - not at this time in a morning, but might look later.

For cilantro, read coriander. Yes, All Purpose Flour is SR Flour. Unfortunately we have some strange names for foods out here--it was like learning a whole new language when we moved here six years ago.

Ooops! It seems that I am not yet fluent in Canadian! ALL PURPOSE FLOUR IS PLAIN FLOUR! Sorry about the wrong info. A girl can get quite confused here as look at this lot that I just found when surfing to check my info...

American flours and British equivalents:
Cake and pastry flour = soft flour
All-purpose flour = plain flour
Bread flour = strong flour, hard flour
Self-rising flour = self-raising flour
Whole-wheat flour = wholemeal flour

And I don't think I have ever seen 'self-rising' flour in Canada. I always thought that 'cake and pastry flour' was SR Flour. But then I never baked much, even before my gluten-free life.

Thanks Pen. I like coriander so i might give those corn cakes a try.
