i have got a lactose free cookbook infront of me and i wanted to make chocolate chip muffins and chocolate brownies,
doctor still unsure if im dairy and lactose or just lactose,
(possible ceoliac but im fine with bread and pasta???)

anyway
125 plain choc chips??? ( dairy must be in them right?)
50g plain chocolate chopped up. ( again isnt this dairy?)
i seen to have gone crazy and have no general knowledge anymore.....

First of all if you are lactose intolerant you probably can't eat or drink any dairy. It really depends on how intolerant you are. I am pretty bad and even a small amount of margarine on a slice of bread is enough to make me ill :(

Don't panic about the chocolate. You just need to read the ingredients listed on the packet and check for butterfat. If it has butter then don't use it. I have made choc muffins with choc chips and I was fine. I used Pure instead of margarine/butter and "Super Cook" choc chips.

Bars of plain chocolate - again you need to read the ingredients and check for butterfat. Bournville used to be dairy free but since production moved from here to France it now contains butterfat :( Tesco organic plain choc is dairy free and very nice. Green and Black do some dairy free bars too. G & B also do cooking choc but I have not checked the ingredients. I would go with my choc chips, so much easier.

I hope that this helps.

I think there are recipes for both chocolate muffins and double choc chip cookies on this site (I put the cookie one on). Like Copper says, supercook choc chips are ok (make sure you get dark choc ones rather than milk), I'm not sure about tesco ones but Asda ones say "may contain milk". Bars of chocolate - Tesco organic is cheapest at 79p per bar, G & B is usually £1.19 or more but both are fine. I think the G&B cooking chocolate is quite expensive. Supercook dark cooking chocolate is dairy free from what I remember but you're probably better off with the Tesco organic eating choc.

I love baking choc chip cookies, but they don't last long enough - once you smell them you can't leave them alone.

I seem to remember putting the choc muffin recipe on this site.

have you seen any improvement since cutting out dairy? what are your symptoms? how are you so sure that wheat doesn't affect you?
