View Full Version : Hi I'm another newbie

I've been dairy free for nearly 2 years and have never felt so well in my life - I didn't know it was possible to not have a headache. I had 2 years of tests for digestive problems - all negative so my doctor suggested I cut out milk totally and knew it was the answer in 3-4 days. I also avoid sugar as I'm a total addict and can't leave it alone once I start. I've just bought a carton of Oat Supreme cream - has anyone got a recipe for a creamy pasta sauce?

Oh, and I also can't have soya (note added next day)

welcome to the site. glad to have another new face.

pasta sauce. well the lazy way would be the sauces by i think meridian sold in tescos and the like.
if you like coconut then a really simple one is fry off the meat of your choice with soya and some herbs garlic then add a tin of coconut milk, simmer gently for 20 mins then add to pasta. works with most meats but especially with chicken. no doubt when the rest come online at a more sensible time they might have other suggestions. keep coming back.:lol2:

Hi, welcome to the site, I'm glad you are feeling better for being dairy free.

I'm sorry I don't know any recipes for a creamy pasta sauce. I make white sauce for lasagne using Pure, flour and soya/oat milk - it doesn't taste brilliant but it will do. I go for tomato sauces more often for pasta and I particularly like Meridian's sun dried tomato one. I tried their creamy mushroom sauce but wasn't too impressed with it.

Hi Matt & Pam,

I appreciate the help. I forgot to mention I also can't use soya which is a right royal pain! I LOVE Tofutti soft cheese but it doesn't like me. Fortunately i like Oatly as a substitute for milk. I'll try the coconut milk, it sounds good, also the meridian sauces.

Welcome to the site. I am sorry that I can't help with pasta sauce as I don't cook pasta.

try the chicken gently fried with herbs and garlic then add some chicken stock and simmer for 15 mins. then add some honey for a few mins uncovered. your looking to have a little sauce not swimming in it so don't add much stock.

On white sauces, I use two tablespoons of flour to about 200ml soya milk (but presume it would work with oat or rice milk). Put flour in small non-stick saucepan, add a tiny amount of milk and make a paste. Over a medium heat, keep adding a bit (40ml?) of milk each time you've got the sauce un-lumpy. A variation which is nice for fish pie is if you put half a red onion in at the beginning - this also works with chopped leeks. Then peas at the end, pour it on top of the fish and its yummy. Can do something very similar for pasta, but don't use mushrooms unless you can face grey sauce. :)

Thanks Nic, I haven't had fish pie for ages (since I stopped having milk) so I'll try that one. The red onion sounds a nice touch.
