Hi everyone! This is my first message ever! I've never got the time with my one year old (tomorrow) son Roman! He has a milk allergy (which is becoming a nightmare now he's walking and climbing everything to reach my tea!).
Anyway, as its his birthday tomorrow, we're having a party for him next friday which i need to take a birthday cake to. Can anyone PLEASE give me a recipie for an easy to make cake???? I have no idea when it comes to baking:confused: !

:) I can recommend banana cake/muffins and have a recipe. If you would like to PM me, I could then send it to you. My 2-year-old daughter also has a dairy allergy. I switched from milk to sugar with lemon in my tea...this way Eden can also have some and I don't have to worry that she may just reach for it and drink it!

I think you'll find you can make any cake to a normal recipe but substitute the marg for Pure marg (I use the green tub) or I think Stork is dairy free.

yeah just use a normal receipe and change the butter for pure srpead. add a little bit extra baking powder as it won't rise as much but tastes fine.
so simple sponge cake is easy.
more details if you need them.
Chocolate is always the answer :D
Morrisons block margarine is also dairy free (wouldn't use it in sandwiches), but is fine for baking.

I always have cocoa in the cupboard for making chocolate cakes :)

What about as a filling? Dont cakes normally have cream and jam in the middle? If i do a chocolate cake is there a chocolate sauce type thingy i can put in the middle???

You can do a buttercream using 6oz icing sugar 3 oz soya marge and cream together. 2 tbsp cocoa powde in a little water and add to mixture, voila! :)

Just make a normal cake but use soya marge and not butter, and take out 3 tbsp flour and put in 3 tbsp cocoa. I just made one and I'm off to scoff it!:rolleyes:
I make chocolate fudge topping/filling by melting 100g dark chocolate, stir in a couple of tbsp of soya milk and then mix in as much icing sugar as you can to make it thick - stick half in the middle of the cake and spread the rest over the top. It will do a 6-7" sandwich cake.
