We know have managed to get all our substitutes from the nice and friendly pharmacy..but most of them say that "normal" recipies may need tweaking to work...so has anyone got a cake/pudding recipe using egg, flour, butter and milk substitutes....Cate has never got to eat anything nice in her life before (she was diagnosed with all these allergies before she was old enough to eat "nice" things) and I thought she deserved a treat!

Do a search on this site for Choc chip muffins. I posted a recipe with just dairy free ingredients BUT I have made them with Doves Farm wheat and gluten free flour and egg replacer. The special flours absorb more water so add a little more water/milk replacer. In my muffin recipe I added an extra 1 fluid ounce. In other words you can use ordinary recipes but be sure to add extra fluid.
I hope that helps.
If you know what a normal cake mix should look like, then you should be able just to add enough fluid to make it look like normal. Have some fun experimenting!!

err no you have to make it runnier than normal as the flour absorbs so much more in cooking.

How about a nice chocolate mousse? I do one bar of Green and Blacks (100g?) melted, then a pack (250ml) of single soya cream mixed in. Put in fridge until cool. Its smooth, so should be OK for a little one. But you might need to sweeten the choc or use one of the non-dairy 'milk' chocolate bars (eg Plamil) to make it palatable for her.
Its very easy to make, and would be a treat.
For grownups I add a dollop of brandy or cointreau and its yummy...

Oh my, that chocolate mouse sounds like ive gone to heaven, without stopping on the way. ive got to try this one out, can you add a little sugar to weigh up the calories!!:rolleyes: for medicinal purposes only mind:lol2:

I make a choc mousse as follows
Day before you make mousse - put the carton of single cream alternative in fridge
Melt one bar of dairy free choc of your choice - I think that Tesco organic plain tastes best
Whip the soya cream until doubled in volume - add a bit of sugar
Mix the melted choc and cream together. Add some gelatine or veg e gel to make sure it sets
Put in fridge for a few hours
Mine ends up as a nice soft mousse too. We can't get enough of it :)
aarrghhh!!!! didn't follow your advice about adding more fluid and ended up with this terribly flat rock-hard offering that I didn't even dare show to the family...must try harder...also, I tried using s-r flour because the chemist seemed incapable of getting in all our prescription last week even after 5 DAYS!!!!!
sorry, incredibly ratty tonight as I'm facing yet another week STUCK INSIDE as my 2 year old came down with chicken pox on Friday just as the girls were no longer contagious

This works a treat and is very easy (especially with a cake tin with a separate base):
6oz crushed digestive biscuits (Dove Farm are dairy free, or economy are often OK)
3oz marg
1 orange (zest and juice)
1lb silken tofu
4oz sugar
2oz cocoa powder
4tbspn oil (I tend to leave this out, depends how rich you want it to be)
slosh of Cointreau or brandy (optional)
Melt marg and stir in crushed biscuits.
Press into base and slightly up sides of 8inch round cake tin, then chill.
Blend together tofu, sugar, cocoa, oil, orange zest and juice (magimix is easiest).
Pour over base.
Cook 35-40 minutes 108C/350F/Gas Mark 4.
Cool before serving (ideally with soya cream).
Let me know how it goes. I've served this to friends who've complained that I shouldn't be eating it as it *must* have dairy in to be so rich. :D

Ruth, are you still looking for recipes? Do you need it to have alternatives for all - flour (not usual plain or sr?), egg, butter and milk? I've got one or two in mind, but wasn't sure about which needed alternatives?? My little boy is 2 and allergic to dairy and egg, so at the moment I'm on a mission to be able to give him treats occasionally, plus day to day foods that don't seem different to everyone else.
absolutely easiest way.
biscuits of your choice, can be digestive or ginger or anything. crushed and wit hmelted pure
then a packed of tofutti soft cheese, add icing sugar to taste and what ever flavour you fancy. vanilla or fruit etc put on top of set biscuit base then chill.

Tried both the cheesecakes- I'm afraid I made a mess of the one you suggested matt, it didn't set-I'm guessing I didn't put enough icing sugar in? The choc orange cheesecake was YUMMY!! actually managed that one with no disasters. Gonna go and look at the links matt gave me now-see what I can find there. As you can see I'm living on cheesecakes at the mo!! Cheers for the advice
Dylan's Mummy - glad my recipe worked. I do think its fairly foolproof, as that's the only sort of pudding recipe I can manage! The only trouble I've had is getting it out of the tin, but a removable base has sorted that.
BTW, I would guess that you can make different flavours by taking out the cocoa powder and substituting something like mashed banana or pureed raspberries and a bit less tofu. Might need a bit of vanilla essence or something for extra flavour.

A few weeks ago I found a recipie for fairy cakes that worked really well with the egg, flour, butter and milk substitute...but I can't find the website again...has anyone else got one...fairy cakes work really well for Cate as I can freeze them and give her just one at atime instead of having to make a whole cake
